Nandos - Sweet peri glazed chicken
NANDO’S SWEET PERI-PERI GLAZED ROAST

EQUIPMENT: roasting tin
INGREDIENTS:
1.4kg chicken
6 medium potatoes
375g pumpkin
4 small onions
2 Tbs lemon juice
150ml Nando’s Sweet Chilli Sauce
2 Tbs oil
Lemon wedges and fresh herbs
- Preheat the oven to 180°C and prepare the chicken to roast - truss
- Peel potatoes, onions and pumpkin, cut into even sized pieces
- Season the chicken, stuff the cavity with lemon wedges and fresh herbs
- brush the chicken generously with Nando’s Sweet Chilli Sauce
- Place on a roasting rack
- Place veg in a smaller baking dish, toss in oil and season
- Roast, basting regularly with Nando’s Sweet Chilli Sauce
